This is my store cupboard quick fix soup. Easy to make and tasty to eat.

What you need:

  • 1 tin Indian style tomato mix (I prefer All Gold but any brand will do)
  • 1 cup split lentils
  • 1 litre vegetarian or chicken stock
  • fresh coriander and yoghurt for garnish (optional)

Method:

Put all ingredients into a pot, bring to the boil on a medium heat and cook for 20mins or until the lentils are soft. Stir occasionally to make sure the lentils don’t stick to the bottom of the pot.
Serve with fresh coriander and Greek yoghurt or a sprinkle of feta cheese and black pepper.

Its really as simple as that.

Tips:

Add more or less stock for a thicker or thinner consistency soup.
